Green Banana Flour

Green Banana Flour is a new addition to the growing range of Gluten Free flours we offer at Replenish.

This amazing flour can replace any plain or self raising flour - when needing a rise just add 1 teaspoon of baking powder to one cup of banana flour. Also you need less flour for the same result so rather than a one for one swap, you’d use ¾ of a cup of banana flour [to one cup of normal flour] at the most. Its taste is comparable to Wholemeal Flour with a lovely earthy taste.

In addition to being Gluten Free, Green Banana Flour is also an excellent source of prebiotic fibre resistant starch for optimum gut health—baking that loves your belly. Also high in essential minerals and vitamins—Zinc, magnesium and manganese and Vitamin E.

This fascinating flour is made from North Queensland green bananas that would otherwise be wasted in the supermarket selection process for being too long, too short, too straight or too bendy. This new ‘waste’ product has the potential to save approximately 500 tonnes of bananas ‘wasted’ in Australia every week! It takes 10 kilos of bananas to make 1 kilo of banana flour.

Ginger Bread Biscuits

Ingredients

  • 125g butter, at room temperature

  • 100g (1/2 cup, firmly packed) brown sugar

  • 125ml (1/2 cup) golden syrup

  • 2 eggs, separated

  • 1 cup of Banana Flour

  • 1 cup rice flour

  • 1 tablespoon ground ginger

  • 1 teaspoon mixed spice

  • 1 teaspoon bicarbonate of soda

  • 2 teaspoons xanthan gum

method

1. Preheat oven to 180°C. Prepare two baking trays with baking paper 2. Use an electric beater to beat the butter and sugar in a bowl until pale and creamy. Add the golden syrup and egg yolks, beat until combined. Stir in the flours, ginger, mixed spice, bicarbonate of soda and xanthan gum. Turn onto a piece of baking paper and knead until smooth. Press dough into a disc. If dough seems hot refrigerate for a couple of minutes. 3. Place the dough between 2 sheets of baking paper and roll out until about 4mm thick. Use your favourite shape cookie cutters and place on trays about 3cm apart. Repeat step 2-3 with any excess dough. 4. Bake in oven for 10 minutes or until brown. Remove from oven. Transfer to a rack to cool. 5. Decorate and enjoy!
