Whole Orange Cake

Ingredients

2 medium Oranges rind on (we used blood oranges but any variety is fine)

1 1/4 tsp Baking Powder (ours at Replenish is Gluten Free)

6 large Eggs

1 1/4 cups White Sugar

2 3/4 cups Almond Meal

Method

  1. Boil the oranges for 40 minutes, make sure you keep an eye on the water level in the pot. This step removes some of the bitterness from the white pith of the fruit.

  2. Rinse the oranges then let them cool slightly.

  3. Slice the cooled oranges into 1cm slices and dice roughly. Remove any pips at this stage.

  4. Preheat the oven to 160 Degrees Celsius. Grease a 23cm cake pan.

  5. Blitz the oranges in a food processor 4 times for 10 seconds. This will be enough to make a thick jammy consistency..

  6. Add almond meal, eggs, baking powder and sugar to food processor. Blend again for 5 10 seconds to mix ingredients.

  7. Pour into prepared cake tin and bake for 60 minutes until golden and skewer comes out clean.

  8. Cool fully in the tin then carefully turn out the cake it will be sticky! Serve with dusting of icing sugar and fresh cream. x
